The Tri Tip has a loose grain resembling a spongy texture if prepared medium rare. Its name comes from the natural occurring triangle shape that forms into the sirloin. Look at the grain closely when slicing, there will be vertical and horizontal muscle fibers running through the steak, this is a must for securing a tender bite!
