This cut from shoulder, squared off and as tender as the tenderloin, is uniform and cooks consistently throughout. With Great Marbling, this steak is perfect pan seared or grilled to Medium Rare. Though not needed, this steak is great Marinated and used as a Center of the Plate protein or used in steak Sandwiches or in a stir fry

2 Outside Skirt Steaks- This beautiful cut is not always the easiest to find in local grocers but is Fabulously marbled. This cut is thicker and more uniform than the Inside Skirt and contains less connective tissue making the mouth feel softer and the flavor Beefier than its counterpart. Grill on high heat and top with a Spicy Chimichurri or Grilled Corn Salsa.  it’s Great for Carne Asada or Fajitas
